This comes from just a fortuitous moment – I was shooting a birthday tea in a snazzy hotel and this apple dessert was just alone on a plate. My plate, I think! I had just one shot – before having to run off to capture the next stage of this kids' party! Huge amount of post-production involved; deleting crumbs on the table; brightening the plate - whitening the tablecloth a bit by reducing shadow and upping exposure.
